Quinoa Veggie Skillet

You will need:

  • quinoa1 cup quinoa
  • vegetable broth2 cups vegetable broth

  • diced zucchini1 zucchini, diced
  • halved cherry tomatoes1 cup cherry tomatoes, halved
  • black beans1 can black beans, drained and rinsed
  • cumin1 teaspoon cumin
  • chili powder1 teaspoon chili powder
  • salt and pepperSalt and pepper to taste
  • olive oil2 tablespoons olive oil

Instructions

  1. Start by heating the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic to the skillet, sauté until the onion is translucent.
  3. Add the diced bell pepper and zucchini to the skillet, continue to sauté for another 5 minutes.
  4. Stir in the quinoa, vegetable broth, cumin, chili powder, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for 15 minutes.
  6. After 15 minutes, stir in the halved cherry tomatoes and drained black beans.
  7. Cover the skillet again and let everything cook for another 5 minutes, or until the quinoa is fully cooked and all the liquid has been absorbed.
